The Negroni at 100: The World's Most Perfectly Balanced Cocktail
Equal parts gin, Campari, and sweet vermouth โ the Negroni's formula has not changed since 1919, and nothing about it needs to. A complete guide to the world's most beloved aperitivo.
The Negroni was born in Florence in 1919 when Count Camillo Negroni โ a man of reportedly extraordinary appetites who had spent time as a rodeo cowboy in America and a gambling house operator in London โ walked into the Caffรจ Casoni on the Via de' Tornabuoni and asked the barman, Fosco Scarselli, to strengthen his usual Americano (Campari, sweet vermouth, soda) by replacing the soda water with gin. Scarselli obliged, garnished it with an orange peel rather than the lemon of the Americano, and one of the most enduring cocktails in history was created.
The formula has never changed: one part gin, one part Campari, one part sweet vermouth, stirred (never shaken) over ice and strained into a chilled glass over a single large ice cube, garnished with an orange peel expressed over the surface.
Its longevity is not sentimental. The Negroni is chemically perfect โ bitter, sweet, spirituous, and aromatic in exactly the proportions that stimulate the appetite and balance the palate. Every component does something essential. Remove or alter any element and the structure collapses.
**The Components: Building the Perfect Negroni**
*The Gin* โ The gin provides the aromatic botanical backbone that lifts the Campari and carries the vermouth's complexity. The choice of gin dramatically changes the character of the Negroni.

*The Campari* โ There is no substitute. Campari (campari.com) is a proprietary blend of herbs, spices, fruits, and roots (the exact recipe is a closely guarded secret, known to contain chinotto, cascarilla bark, rhubarb, and grapefruit peel) macerated in alcohol and water. It is the non-negotiable center of the Negroni's flavor.
*The Vermouth* โ Sweet red vermouth is the Negroni's most variable element and the one that most rewards exploration.

**The Method: Why Stirred, Not Shaken**
The Negroni must be stirred, not shaken. This is not arbitrary tradition. Shaking a spirit-forward cocktail (one containing no egg, cream, or citrus) introduces air bubbles and over-dilutes the drink, producing a cloudy, agitated result. Stirring over ice cools and dilutes the drink in a controlled, measured way, maintaining its clarity and producing the silky, smooth texture that makes a Negroni feel so satisfying in the hand.
Stir for 30โ45 seconds over large ice cubes in a mixing glass. Strain over a single large ice cube (which melts more slowly and dilutes the drink less rapidly). Express an orange peel โ twist it over the surface of the drink to release the essential oils, run the peel around the rim, and drop it in.
**The Great Variations**
*Negroni Sbagliato* โ 'wrong Negroni': replace the gin with Prosecco or Champagne for a lighter, spritzier version with a beautiful effervescence. Created by accident in 1972 at Bar Basso in Milan when a barman reached for Prosecco instead of gin. Now one of the most beloved aperitivo cocktails in the world.
*Mezcal Negroni* โ replace gin with a smoky mezcal (Del Maguey Vida or Banhez) for a dramatically different, earthier, more complex drink.
*White Negroni* โ replace Campari with Suze (French gentian liqueur) and use Lillet Blanc instead of sweet vermouth; garnish with grapefruit peel. A more delicate, herbaceous variation.
*Boulevardier* โ replace gin with bourbon for a richer, darker, more autumnal drink that is more spirit-forward and less bitter.
