Classic Vichyssoise with Truffle & Crispy Leeks

Classic Vichyssoise with Truffle & Crispy Leeks

May 31, 2026

Vichyssoise was created by Louis Diat at the Ritz-Carlton in New York in 1917 — a French chef who took the leek-and-potato soup of his Vichy childhood, chilled it, enriched it further with cream, and presented it as a cold elegant starter. It became an immediate classic of fine dining and has never left.

The logic is simple: cold blunts flavors, which means a vichyssoise requires assertive seasoning, especially just before service. What's silky and perfectly seasoned warm will taste flat and under-salted cold. Taste again before you serve. Serve in chilled bowls. The truffle oil and crispy leeks are the finish that justify the effort.

Ingredients (serves 12 as a chilled event first course, served in cups or bowls): - 2½ lbs leeks (about 6 large), white and pale green parts only, thoroughly washed and sliced - 1¾ lbs Yukon Gold potatoes, peeled and roughly cubed - 1 large white onion, roughly diced - 4 tablespoons unsalted butter - 6 cups good-quality chicken stock (or vegetable stock for a vegetarian version) - 1⅔ cups heavy cream - ¾ cup whole milk - 2 teaspoons fine sea salt, or more to taste - ½ teaspoon white pepper - 1 tablespoon fresh chives, very finely minced

Crispy Leek Rings: - 2 large leeks, white part only, sliced into very thin rings - 1 cup neutral oil for frying - 2 tablespoons all-purpose flour - Flaky salt

Garnish: - 2 tablespoons white truffle oil - Additional fresh chives, minced - Flaky sea salt - White pepper

Vichyssoise: Melt butter in a large heavy pot over medium-low heat. Add leeks and onion. Cook gently, stirring occasionally, for 15–20 minutes until completely softened and translucent — do not brown, which would affect the pale color and sweet flavor. Add potatoes and stock. Bring to a gentle simmer. Cook for 20–25 minutes until potatoes are completely tender.

Blend in batches in a high-powered blender for 2 full minutes per batch until completely smooth. Strain through a fine sieve, pressing firmly. Return to a clean pot. Stir in cream and milk. Season assertively with salt and white pepper. Cool to room temperature, then refrigerate until thoroughly chilled — at least 4 hours, ideally overnight.

Adjust seasoning just before service — cold blunts flavors, and a well-seasoned warm soup often needs additional salt when served cold.

Crispy Leeks: Toss leek rings with flour and a pinch of salt in a bowl until lightly coated. Heat oil in a small saucepan to 350°F. Fry leeks in small batches for 1–2 minutes until golden and crisp. Drain on paper towels. Season immediately with flaky salt. Can be made 1 hour ahead; store uncovered at room temperature.

Service: Pour the chilled vichyssoise into cold soup bowls or small cups. Mound a small pile of crispy leek rings in the center. Drizzle truffle oil very sparingly — a few drops only around the soup. Scatter minced chives over the surface. Finish with a pinch of flaky salt and white pepper.

Temperature Is Everything: Vichyssoise must be served thoroughly cold — a slightly warm vichyssoise loses all its refreshing quality and tastes simply like lukewarm leek soup. Chill the serving bowls in the freezer for 15 minutes before service.

Variations: Watercress Vichyssoise: add 7 oz watercress to the soup with the stock — it creates a beautiful pale green color and a peppery, herbal flavor. Corn Vichyssoise: replace half the potato with fresh corn kernels for a sweeter, more American variation.

Make-Ahead: Vichyssoise can and should be made 2 days ahead. It improves as the flavors meld and the texture becomes more silky. Store in the refrigerator and stir before service.

Pro Tips: Washing leeks thoroughly is critical — sand lodges between the layers and is invisible until it crunches in a guest's bowl. Slice the leeks, soak in cold water for 10 minutes, and drain carefully. The white pepper is traditional (black pepper creates visible specks that mar the elegant pale color).
