Smoked Salmon & Avocado Rose Toast Bites

Smoked Salmon & Avocado Rose Toast Bites

May 28, 2026

The avocado rose technique is easier than it looks and becomes reliable after one or two practice attempts. Slice a ripe-but-firm Hass avocado half thinly, fan the slices in a line on your cutting board overlapping by half, then roll from one end. The whole process takes under a minute. A ripe-but-not-soft avocado is the key — too soft and it won't slice cleanly, too firm and it won't fan.

On thick-cut sourdough with herb cream cheese, smoked salmon, everything bagel seasoning, and capers, the result looks like a composed restaurant bite and tastes like one. Assemble no more than 30 minutes before service — these don't hold.

Ingredients (makes 24 bites): - 6 thick slices quality sourdough bread (about ¾ inch thick), each slice cut into 4 squares - 7 oz cold-smoked salmon (Nova-style), thinly sliced into ribbons - 2 ripe but firm Hass avocados - 1 tablespoon fresh lemon juice (for the avocado) - Everything bagel seasoning (Trader Joe's or homemade: equal parts sesame seeds, poppy seeds, dried garlic, dried onion, and flaky salt) - Capers for garnish - Fresh dill fronds - Lemon zest and lemon wedges for serving - Cracked black pepper

Whipped Herb Cream Cheese: - 8 ⅞ oz full-fat cream cheese, at room temperature - 2 tablespoons heavy cream - 2 tablespoons fresh dill, very finely minced - 1 tablespoon fresh chives, finely snipped - Zest of 1 lemon - 1 tablespoon fresh lemon juice - Salt and white pepper

Whipped Herb Cream Cheese: Beat cream cheese and heavy cream with an electric mixer for 2 minutes until very fluffy and light. Fold in dill, chives, lemon zest, and lemon juice. Season with salt and white pepper. Taste — it should be bright, herby, and tangy. Transfer to a piping bag. Refrigerate up to 48 hours.

Toast Preparation: Toast sourdough slices until deeply golden and very crisp — broil or toast at maximum setting. Cut each slice into 4 equal squares. Keep at room temperature until assembly.

Avocado Rose: Halve and peel the avocado. Slice one half thinly — about ⅛ inch — with a sharp knife. Fan the slices in a line on your cutting board, overlapping each by half. Roll the fanned slices from one end, tucking as you go, to create a rose shape. Toss immediately with lemon juice. Repeat with the second half.

Assembly: Pipe a generous mound of herb cream cheese onto each toast square. Cut the avocado roses into individual pieces or carefully place small rosette clusters on the cream cheese. Drape a ribbon of smoked salmon alongside or around the avocado. Sprinkle everything bagel seasoning over the cream cheese and avocado. Add 1–2 capers. Tuck a small dill frond into the cream cheese. Finish with lemon zest and cracked pepper.

The Mimosa Pairing Logic: This is the definitive classic orange or blood orange mimosa pairing — the smoked salmon and citrus combination is one of the most widely known in fine dining, and the cream cheese's richness cushions the palate perfectly between sips of citrus-forward champagne. The everything seasoning's complex, toasty flavor creates an aromatic bridge that makes the pairing feel cohesive.

Make-Ahead: Herb cream cheese (48 hours, refrigerated); avocado roses (prepare at most 1 hour ahead, keep covered with lemon juice); assemble no more than 30 minutes before service. Smoked salmon should be sliced and refrigerated up to 2 hours before assembly.

Pro Tips: The key to a beautiful avocado rose is a sharp, thin-bladed knife and a firm avocado. Practice the technique once before the event — it becomes very easy after the first attempt. The everything seasoning is a critical flavor element, not merely decoration; be generous with it. Use the best-quality smoked salmon you can source — for this preparation, Acme Smoked Fish (widely distributed) or a local artisan smoked salmon is ideal.
