The Peach Bourbon Champagne Mimosa

May 5, 2026
The Peach Bourbon Champagne Mimosa is the Southern American cocktail that has earned its place in the mimosa canon — a drink that bridges the classic Bellini, the Bourbon Peach Smash, and the classic Champagne cocktail into a unified celebration of two of the American South's most popular agricultural products: Georgia peaches and Kentucky bourbon. The bourbon adds warmth, vanilla, and oak complexity that raw peach purée lacks; the Champagne lifts everything with effervescence and mineral dryness. The result is a drink of genuine occasion.
The Southern Peach and Bourbon Tradition
Georgia has been known as the Peach State since the 19th century — though California now produces significantly more peaches commercially, Georgia's reputation for quality, particularly in the July–August peak season varieties, remains deserved. Pearson Farm in Fort Valley, Georgia, is one of the oldest and most established peach farms in the country, shipping heritage varieties since 1887.
Kentucky bourbon is America's most protected spirit category — by law, it must be produced in the United States, made from a grain mixture of at least 51% corn, aged in new charred oak barrels, and distilled to no more than 160 proof. The vanilla, caramel, and oak notes that develop during barrel aging create an extraordinary natural affinity with stone fruit, particularly peach and apricot. Woodford Reserve and Buffalo Trace are the two most recommended bourbons for cocktail use at this flavor profile — both provide complexity without overwhelming other ingredients.
Fresh Peach Purée: - 6 ripe yellow freestone peaches (or white peaches, if preferred), blanched, peeled, pitted, and cubed - 1 tablespoon fresh lemon juice - 1 tablespoon honey - ½ teaspoon vanilla extract (or seeds from ¼ vanilla bean for a more nuanced result)
Blend all ingredients until completely smooth. Pass through a fine-mesh sieve. The purée should be vivid orange-gold with a fragrant peachy-vanilla aroma. Press plastic wrap directly onto the surface. Refrigerate; use within 24 hours.
Ingredients (serves 6): - 1 cup fresh peach purée (above) - 2 oz bourbon (Woodford Reserve, Buffalo Trace, or Bulleit Bourbon) - 1 bottle (25 oz chilled Champagne Brut NV (Laurent-Perrier La Cuvée, or Billecart-Salmon Brut Réserve) - Optional: brown sugar and cinnamon rim (moisten rim with peach juice, dip in brown sugar mixed with ¼ teaspoon cinnamon) - Thin peach slices, fresh mint sprig, and a cinnamon stick for garnish
Instructions: Stir peach purée and bourbon together in a small pitcher. The blend should be a warm amber-gold. Chill thoroughly.
Rim flutes with brown sugar-cinnamon if desired. Chill Champagne flutes for 5 minutes. Pour 1¾ oz of the peach-bourbon blend into each prepared flute. Top slowly with chilled Champagne, pouring down the side. The warm amber purée will bloom through the pale wine. Garnish with a thin peach slice on the rim, a fresh mint sprig, and a cinnamon stick balanced across the rim.
For a Mimosa Bar (serves 12): - 2 cups peach purée - 4 oz bourbon - 2 bottles Champagne Brut, chilled
Variations: - Add ½ oz of peach schnapps (DeKuyper Peach Schnapps) per serving for a Double Peach Bourbon Champagne Mimosa with greater stone-fruit intensity. - Replace Champagne with sparkling rosé for a Peach Bourbon Rosé Mimosa with a deeper, more complex color and complementary red fruit notes. - Add 2 dashes of Angostura bitters per serving for a Peach Bourbon Old Fashioned Mimosa that references the classic cocktail.
Pairing: The bourbon's warmth and the peach's sweet stone-fruit character make this mimosa exceptional alongside Southern-inspired brunch dishes — biscuits with honey butter, pecan French toast, shrimp and grits, and any preparation with maple syrup or caramel. The bourbon depth also pairs well with smoked meats and any charcuterie board.

Pro Tips: The bourbon ratio in this recipe (⅓ oz per serving) is deliberately moderate — enough to add complexity without making the drink feel heavy. Bourbon at higher ratios can overwhelm the delicate peach; this balance allows the fruit to remain the primary flavor with bourbon as a supporting complexity note. The vanilla in the purée is the secret ingredient — it bridges the peach and the bourbon's natural vanilla-oak character seamlessly.
