Fresh Oysters with Champagne Mignonette

Fresh Oysters with Champagne Mignonette

May 24, 2026

A tray of oysters on ice at an event is one of those things that immediately tells guests they're somewhere worth being. Nothing to cook. The whole effort is in sourcing them well and shucking them close to service time. Let the product do the work.

The Champagne mignonette instead of the usual red wine vinegar version is a small change that makes genuine sense here — it's more delicate, it bridges the brine of the oyster with the wine being served alongside, and it feels considered rather than default.

Ingredients (serves 20 at a cocktail reception): - 48 fresh oysters (a mix of East Coast and West Coast varieties for flavor contrast) - Crushed ice for presentation

Champagne Mignonette: - 4 tablespoons Champagne vinegar - 2 tablespoons dry Champagne or Cava - 3 tablespoons finely minced shallot - 1 teaspoon freshly cracked black pepper - Pinch of sugar

Additional Accompaniments: - Fresh lemon wedges - Tabasco - Freshly grated horseradish - Classic cocktail sauce

Instructions: Combine all mignonette ingredients in a small bowl. Let stand at room temperature for 30 minutes for the shallot to macerate. Refrigerate until service.

Shuck oysters as close to service as possible (or have them shucked by your fishmonger no more than 2 hours ahead). Arrange on a bed of crushed ice. Place mignonette, lemon, and accompaniments in small bowls alongside.

Pro Tips: The variety of oysters matters — offer at least two: a briny East Coast variety (Wellfleet, Blue Point) and a sweeter, creamier West Coast variety (Kumamoto, Hama Hama). The contrast educates guests and elevates the tasting experience considerably.
