Mushroom Wellington (Vegetarian)

Mushroom Wellington (Vegetarian)

April 10, 2026

The Mushroom Wellington is the vegetarian showstopper that commands the same reverence as its beef counterpart — a golden, shattering puff pastry shell encasing a dense, intensely savory filling of wild mushrooms, spinach, caramelized onions, and walnuts. When sliced at the table, it reveals a dramatic cross-section of color and texture that impresses even dedicated meat-eaters.

This is the vegetarian main course that earns genuine applause. It can be fully assembled and refrigerated a day ahead, making it ideal for entertaining.

Ingredients (serves 8–10): - 2 sheets all-butter puff pastry, thawed - 1 egg, beaten (egg wash)

Mushroom Duxelles: - 1¾ lbs mixed wild mushrooms (portobello, shiitake, porcini, cremini), very finely chopped - 3 shallots, finely minced - 4 garlic cloves, minced - 3 tablespoons unsalted butter - 2 tablespoons olive oil - 2 tablespoons fresh thyme leaves - ⅓ cup dry sherry or Madeira - 1 tablespoon black truffle paste (optional but transformative) - Salt and cracked black pepper

Filling: - 7 oz baby spinach, wilted, squeezed completely dry, and chopped - 3 ½ oz toasted walnuts, roughly chopped - 2 ⅞ oz Parmigiano-Reggiano, finely grated - 7 oz soft goat cheese or cream cheese - 1 tablespoon Dijon mustard - Salt and pepper

Duxelles Instructions: The key to a Wellington that doesn't make the pastry soggy is a completely dry mushroom filling. Chop mushrooms very finely — almost a paste. Heat butter and oil in a large pan over high heat. Add shallots and garlic, cook 2 minutes. Add mushrooms and thyme. Cook over high heat, stirring frequently, for 18–22 minutes until all moisture has evaporated and the mixture is dark, dense, and completely dry. Add sherry, cook until evaporated. Stir in truffle paste. Spread on a tray and cool completely (or refrigerate overnight).

Assembly: Combine cooled duxelles with wilted spinach, walnuts, Parmesan, goat cheese, and Dijon. Season assertively.

Lay one puff pastry sheet on a floured surface. Brush the surface lightly with Dijon mustard. Shape the mushroom filling into a log down the center of the pastry, leaving 3 inches on each side. Roll the pastry firmly around the filling, sealing the edges with egg wash. Press and crimp the ends to seal completely. Brush the entire surface with egg wash. Score the top decoratively with the back of a knife. Refrigerate 30 minutes minimum (or overnight).

Baking: Preheat oven to 425°F. Bake on a parchment-lined tray 25–30 minutes until deep golden brown and the pastry sounds hollow when tapped on the bottom. Rest 10 minutes before slicing with a sharp serrated knife.

Make-Ahead: Assemble, egg-wash, and refrigerate up to 24 hours before baking. Do not freeze assembled — the pastry will go soggy.

Pro Tips: The duxelles must be bone-dry — any remaining moisture will steam inside the pastry and create a soggy bottom. Cooking the mushrooms in batches if necessary ensures proper evaporation. Resting the Wellington before slicing is critical — cut too soon and the filling slides out. Serve with a light red wine sauce or a mushroom jus for non-vegetarians at the table.
