Mini Beef Wellington Bites

Mini Beef Wellington Bites

May 27, 2026

Mini Beef Wellington Bites are the passed appetizer that causes a genuine reaction — a buttery golden pastry parcel enclosing a perfectly cooked cube of beef tenderloin, mushroom duxelles, and a slick of Dijon mustard. They are technically demanding but absolutely worth it, and can be prepared entirely in advance.

The full Beef Wellington is Gordon Ramsay's signature dish and a centrepiece of fine dining for decades. This miniaturized party version delivers the same essential experience in a single, elegant bite.

Ingredients (makes 24 pieces): - 14 ⅛ oz beef tenderloin, cut into 24 small cubes (¾ in) - 14 ⅛ oz mushrooms (cremini or chestnut), very finely chopped - 2 shallots, minced - 2 garlic cloves, minced - 2 tablespoons fresh thyme leaves - 2 tablespoons unsalted butter - 2 tablespoons Dijon mustard - 6 slices Parma ham or prosciutto - 2 sheets puff pastry (ready-rolled) - 1 egg, beaten (egg wash) - Salt and cracked black pepper

Instructions: Duxelles: Sauté shallots and garlic in butter until soft. Add mushrooms and thyme. Cook over high heat, stirring constantly, until all moisture has evaporated and mixture is very dry (this is critical — excess moisture makes soggy pastry). Season and cool completely.

Sear beef cubes in a very hot pan with a drop of oil, 30 seconds per side — just to form a crust. Cool. Brush with Dijon mustard.

Cut puff pastry into 24 small squares. Place a small layer of duxelles, then a beef cube. Fold and seal, placing seam-side down. Brush with egg wash. Chill 30 minutes.

Bake at 425°F for 12–14 minutes until pastry is deeply golden. Serve immediately.

Pro Tips: Completely dry duxelles is non-negotiable — any moisture steams the pastry from the inside, creating a soft base. Cook the mushrooms until the pan is completely dry before using.
