Haricots Verts with Toasted Almonds & Brown Butter

April 10, 2026
Haricots verts — French green beans — are the most elegant version of the humble green bean. They are thinner, more tender, and more delicate than standard varieties, and when blanched to a vivid emerald green and finished with toasted almonds and nutty brown butter, they become one of the most quietly impressive side dishes on any fine dining menu.
The preparation is essentially effortless, can be done entirely ahead, and complements virtually every main course from beef to fish to a vegetarian Wellington.
Ingredients (serves 10–12): - 1¾ lbs haricots verts (or the finest, thinnest green beans available), topped and tailed - 2 ⅞ oz slivered or flaked almonds - 2 ⅛ oz unsalted butter - 2 shallots, very finely minced - 2 garlic cloves, thinly sliced - Zest of 1 lemon - 1 tablespoon fresh lemon juice - Flaky sea salt and cracked black pepper - Optional: 1 tablespoon finely chopped fresh tarragon or flat-leaf parsley
Blanching: Bring a large pot of very well-salted water to a rolling boil. Prepare an ice bath (large bowl of cold water with plenty of ice). Blanch beans 2½–3 minutes — they should be vivid green and tender with a definite bite remaining. Immediately transfer to the ice bath to stop the cooking and preserve the color. Drain thoroughly and pat completely dry with clean towels. (This can be done up to 24 hours ahead; store dry beans in the refrigerator.)
Toasted Almonds: In a dry skillet over medium heat, toast almonds 3–4 minutes until golden and fragrant. Tip immediately onto a plate.
Brown Butter Finish: Melt butter in a wide sauté pan over medium heat. Continue cooking, swirling the pan, until the butter foam subsides and the milk solids turn golden-hazelnut brown and smell nutty — about 4 minutes. Add shallots and garlic, cook 1 minute. Add the blanched beans, toss to coat and heat through, about 2 minutes. Add lemon zest and juice. Season generously with salt and pepper.
Transfer to a warm platter. Scatter toasted almonds and fresh herbs over the top.
Pro Tips: Brown butter is unforgiving — it can go from perfectly nutty to burnt in seconds once the milk solids begin to color. Have all other ingredients ready before you start the butter. The beans can be blanched and the almonds toasted hours ahead; the brown butter finish takes only 5 minutes and is best done immediately before service.
