Grilled Halloumi Skewers with Pomegranate Molasses & Mint

Grilled Halloumi Skewers with Pomegranate Molasses & Mint

March 19, 2026

Halloumi is the Cypriot cheese with the extraordinary property of holding its shape under direct heat — it can be grilled, pan-fried, or broiled to a golden, crispy crust without melting, producing a warm, squeaky-textured bite that has made it one of the most popular vegetarian ingredients in contemporary cooking. Its origins date to the medieval Byzantine period on the island of Cyprus, where it was traditionally made from a mixture of goat's and sheep's milk, and it remains the national cheese of Cyprus with a protected EU designation of origin (PDO) for Cypriot halloumi.

On a skewer with cherry tomatoes and red onion, char-grilled until the cheese is golden and the vegetables blister, then drizzled with pomegranate molasses and sprinkled with pomegranate arils and fresh mint, halloumi becomes a party appetizer with a vivid Middle Eastern and Eastern Mediterranean flavor profile. The sweet-tart pomegranate molasses against the salty, chewy cheese is a combination rooted in Lebanese, Syrian, and Turkish cooking traditions.

Ingredients (makes 24 skewers): - 3 blocks authentic Cypriot halloumi (approximately 7 ⅞ oz each), cut into 1½-inch cubes - 24 cherry tomatoes (a mix of red and yellow for color) - 1 large red onion, cut into 1½-inch squares (24 pieces) - 24 bamboo or metal skewers (soak bamboo skewers 30 minutes in water)

Marinade: - 3 tablespoons excellent extra virgin olive oil - 1 tablespoon fresh lemon juice - 1 teaspoon dried oregano - ½ teaspoon smoked paprika - 1 garlic clove, grated - Flaky sea salt and cracked black pepper

Pomegranate Glaze: - 3 tablespoons good-quality pomegranate molasses (the thick, syrupy reduction — not pomegranate juice) - 1 tablespoon honey - 1 tablespoon fresh lemon juice - Pinch of flaky salt

Garnish: - Seeds of 1 large pomegranate (approximately ¾ cup fresh arils) - 2 tablespoons fresh mint leaves, finely sliced - Flaky sea salt - Additional fresh mint sprigs

Marinade: Whisk together olive oil, lemon juice, oregano, smoked paprika, garlic, salt, and pepper. Toss the halloumi cubes, cherry tomatoes, and red onion pieces in the marinade. Let sit 15 minutes at room temperature — halloumi does not need to marinate long; the marinade is primarily for the vegetables and the surface flavor of the cheese.

Pomegranate Glaze: Whisk together pomegranate molasses, honey, lemon juice, and salt. Set aside.

Skewering: Thread each skewer with: onion square, cherry tomato, halloumi cube, cherry tomato, onion square. The halloumi should be centered so it chars evenly. Press the ingredients together snugly so they support each other during grilling.

Grilling: Heat a ridged grill pan or outdoor grill to high. Brush lightly with oil. Grill the skewers for 2–3 minutes per side, turning once, until the halloumi is deeply charred with golden grill marks and the tomatoes and onions are blistered and slightly softened. The halloumi should be warm throughout with a crispy, golden exterior and a soft, squeaky interior.

Assembly: Arrange the hot skewers on a serving platter. Drizzle the pomegranate glaze generously over each skewer. Scatter pomegranate arils over and around the skewers. Sprinkle sliced fresh mint. Add a pinch of flaky salt. Tuck fresh mint sprigs around the platter for color.

Serve immediately — halloumi becomes rubbery as it cools.

The Mimosa Pairing Logic: The salty, charred halloumi and the sweet-tart pomegranate molasses create a flavor profile that pairs beautifully with bright, fruit-forward mimosas. A pomegranate mimosa is the most direct echo — the pomegranate in the glaze and the drink create a perfect resonance. A blood orange mimosa or classic orange mimosa provides the citrus acidity that cuts through the cheese's salt. The mint in the garnish creates a bridge to cucumber mint mimosas and elderflower St-Germain mimosas. Avoid very sweet tropical mimosas — the halloumi's salt needs acid as its counterpoint, not additional sweetness.

Make-Ahead: Marinade (2 days, refrigerated); pomegranate glaze (1 week, refrigerated); pomegranate arils extracted (3 days, refrigerated); vegetables and halloumi cut (4 hours, refrigerated). Thread and grill immediately before service — halloumi does not reheat well.

Pro Tips: Authentic Cypriot halloumi (PDO-certified) has a firmer texture and more complex flavor than mass-market domestic imitations — it holds its shape better under heat and has a more authentic, slightly tangy character. The grill or pan must be very hot before the skewers go on — a moderate temperature causes the halloumi to stick and tear rather than develop a clean char. Pomegranate molasses is a different ingredient entirely from pomegranate juice — it is a thick, syrupy reduction with a deep, complex sweet-tart flavor; substituting juice will produce a thin, watery result with no glaze character.
