The Cucumber Dill Aquavit Mimosa

March 10, 2026
The Cucumber Dill Aquavit Mimosa is the most surprising and intellectually interesting drink in this collection — a Nordic-inspired mimosa that takes the spa-classic cucumber and elevates it with the caraway-dill spirit of Scandinavia, creating a drink that is savory, herbaceous, cooling, and sparkling simultaneously. Aquavit's character — clean grain spirit flavored with caraway and dill — mirrors the garnish so precisely that the drink appears to have been distilled from its own botanical content.
About Aquavit
Aquavit (from Latin *aqua vitae*, "water of life") is Scandinavia's defining spirit — a grain or potato distillate flavored primarily with caraway or dill, with supporting botanicals that vary by country, region, and producer. Norwegian aquavit is the most prominent internationally; Swedish and Danish styles differ in their botanical balance and aging approach.
The two leading aquavit producers for cocktail use are Linie Aquavit (Norwegian, barrel-aged, with a smooth rounded character from its famous ocean voyage aging process) and Krogstad Festlig Aquavit (from House Spirits in Portland, dill-forward, excellent for cocktails). Aalborg Taffel Akvavit (Danish, unaged, clean caraway) is more assertive and works exceptionally well in this recipe for guests who want the Nordic character front and center.
Fresh Cucumber-Dill Juice: - 1 large English cucumber (about 14 oz) - Large bunch fresh dill (about 1 oz) - 1 tablespoon fresh lime juice - Pinch of flaky sea salt
Juice the cucumber through a juicer, or blend and strain through a fine-mesh sieve, pressing all liquid through. Blend the cucumber juice with fresh dill fronds for 30 seconds. Strain again. The juice should be pale green and intensely aromatic. Add lime juice and salt. Refrigerate immediately; use within 24 hours.
Ingredients (serves 6): - 1 cup cucumber-dill juice (above) - 1½ oz Krogstad or Linie Aquavit - 1 bottle (25 oz chilled Champagne Brut Blanc de Blancs or dry Cava Brut Nature (the dryness of these wines complements the savory profile — avoid sweeter Prosecco for this recipe) - Thin cucumber rounds, fresh dill sprigs, and edible flowers for garnish
Instructions: Stir cucumber-dill juice and aquavit together. Taste — the dill should be prominent but the cucumber should provide the cooling freshness. Chill thoroughly.
Chill champagne flutes or wide white wine glasses for 5 minutes (this recipe also works beautifully in a stemless wine glass, which shows the garnish better). Pour 1½ oz of the cucumber-aquavit blend into each glass. Top slowly with chilled Blanc de Blancs. The pale green juice creates a subtle color in the pale wine. Garnish with a thin cucumber round on the rim, a generous fresh dill sprig, and an edible flower (white viola or elderflower is particularly elegant).
For a Mimosa Bar (serves 12): - 2 cups cucumber-dill juice - 3 oz aquavit - 2 bottles Champagne Blanc de Blancs, chilled
Variations: - Add 2 tablespoons of thinly sliced jalapeño to the blending step for a Spicy Cucumber Aquavit Mimosa with Scandinavian-meets-Mexican character. - Replace aquavit with cucumber-infused gin (Hendrick's Gin is the classic) for a Cucumber Gin Champagne Mimosa that is more approachable for guests unfamiliar with aquavit. - Add fresh mint alongside the dill for a Cucumber Mint Dill Champagne Mimosa of greater herbal complexity.
Pairing: The savory, herbaceous character of this mimosa makes it the ideal companion for smoked fish preparations — gravlax, smoked salmon, pickled herring — as well as anything with cream cheese, capers, or fresh cucumber. It is the natural pre-dinner drink before a Scandinavian-inspired brunch menu.
Pro Tips: Cucumber juice oxidizes extremely quickly — prepare it no more than 2 hours before service and keep it refrigerated. The dill also loses its freshness rapidly after blending; the juice will develop a cooked-dill flavor if left more than a few hours. Make it fresh the morning of service for the brightest, most vibrant result.
