Gourmet Croissant Breakfast Sandwich

Gourmet Croissant Breakfast Sandwich

May 27, 2026

A croissant breakfast sandwich lives or dies on the quality of the croissant. Source them from the best bakery you can find on the morning of your brunch — a good croissant, still slightly warm, with genuine layers and real butter, makes this sandwich something worth seeking out. A mediocre one makes it just another breakfast wrap.

The filling — a thin, just-set omelette, prosciutto, brie, and arugula with a honey Dijon spread — is restrained by design. The croissant is the event. Everything else supports it.

Ingredients (serves 4): - 4 large, fresh croissants from a quality bakery - 6 large eggs - 2 tablespoons whole milk or cream - 4 slices brie cheese (about 2 ⅞ oz total) - 4 slices prosciutto di Parma - 1 cup baby arugula - 2 tablespoons unsalted butter - Salt and white pepper

Honey Dijon Spread: - 2 tablespoons good-quality mayonnaise - 1 tablespoon Dijon mustard - 1 teaspoon honey - Pinch of cayenne and salt

Instructions: Whisk together the honey Dijon spread ingredients. Warm croissants in oven at 300°F for 3 minutes. Slice horizontally.

For each omelette: heat 1 teaspoon butter in a small non-stick pan over medium-low. Pour in a quarter of the whisked egg mixture. Let set 30 seconds, then fold in thirds, keeping it thin and flat. Cook 1 more minute — inside should be barely set.

Spread honey Dijon on both cut surfaces. Layer arugula on the bottom half. Add the folded omelette — the heat will melt the brie placed on top. Drape prosciutto over the brie. Close the croissant.

Halve diagonally and serve immediately, topped with a pinch of flaky salt.

Pro Tips: A thin, just-set omelette is far more luxurious than a rubbery, fully cooked egg. The honey Dijon spread is the subtle flavor element that ties all components together. Assemble at the last possible moment — the croissant softens quickly once filled.
