Dark Chocolate Lava Cakes with Raspberry Coulis

May 22, 2026
The chocolate lava cake moment — spoon breaks the shell, warm ganache pours out — never stops being satisfying. It's been on restaurant dessert menus since Jean-Georges Vongerichten popularized it in New York in 1987 and it's still ordered constantly, which tells you something about how reliably it delivers.
For hosting at home, the good news: you can fill the ramekins and refrigerate them the day before, then bake to order in twelve minutes while guests are finishing dinner. More practical than it looks.
Ingredients (makes 12): - 10 oz 70% dark chocolate, finely chopped - 10 tablespoons unsalted butter - 4 whole eggs - 4 egg yolks - 1½ cups powdered sugar - ½ cup all-purpose flour - Pinch of salt - 1 teaspoon vanilla extract - Butter and cocoa powder for ramekins
Raspberry Coulis: - 10 oz fresh or frozen raspberries - 3 tablespoons powdered sugar - 1 tablespoon lemon juice
Instructions: Melt chocolate and butter together. Cool slightly. Whisk eggs, yolks, and powdered sugar vigorously for 2 minutes. Fold in chocolate mixture. Fold in flour, salt, and vanilla. Butter and dust ramekins with cocoa. Fill ¾ full. Refrigerate up to 24 hours.
Bake at 425°F for exactly 12–13 minutes (12 from room temperature, 14 from refrigerator). Centers should be set around edges but still jiggly. Invert onto plates. Serve immediately with raspberry coulis and vanilla ice cream.
Pro Tips: The single variable is oven temperature and baking time — test one ramekin the day before your event to calibrate your specific oven. The difference between underdone (soup) and overdone (muffin) is literally 1–2 minutes.
