Caviar Blini Service with Crème Fraîche

Caviar Blini Service with Crème Fraîche

May 27, 2026

There are few things at a party table that communicate occasion as clearly as a pot of good caviar surrounded by warm buckwheat blinis and crème fraîche. No explanation required. Guests understand immediately what kind of evening this is.

The blinis are made from scratch — buckwheat flour, yeast, egg whites folded in for lightness — and served warm. The caviar question is about sourcing and budget: Ossetra or farmed Siberian sturgeon are the value-quality intersection. Avoid anything priced suspiciously low. The difference between genuine sturgeon roe and inferior substitutes is unmistakable.

Ingredients (serves 12 as a passed or plated appetizer):

Buckwheat Blinis (makes 36 small blinis): - ¾ cup buckwheat flour - 6 tablespoons all-purpose flour - 1 teaspoon instant yeast - 1 teaspoon sugar - ¾ cup warm whole milk - 1 large egg, separated - ½ teaspoon fine salt - 1 tablespoon unsalted butter, melted

The Service: - 1 ¾ oz-2 ⅞ oz Ossetra caviar, Siberian sturgeon caviar, or the finest caviar you can source (farmed options are increasingly excellent and more sustainable) - 5 ¼ oz crème fraîche, full-fat - 1 tablespoon fresh chives, very finely snipped - ⅔ oz unsalted butter, melted (for the blinis)

Traditional Accompaniments (optional but classic): - Finely minced shallot (1 tablespoon) - Capers, finely chopped (1 tablespoon) - 1 hard-boiled egg, yolk sieved, white minced (kept separate) - Lemon wedges

Blini Instructions: Combine buckwheat flour, all-purpose flour, yeast, and sugar. Whisk in warm milk and egg yolk until smooth. Cover with plastic wrap and rest in a warm place for 45 minutes until slightly puffed and bubbly. Beat egg white to stiff peaks, fold gently into the batter with the melted butter.

Cook tablespoon-sized rounds in a lightly buttered pan over medium heat, about 1½ minutes per side until golden and cooked through. Keep warm in a 200°F oven on a parchment-lined sheet, lightly covered with foil.

Service: Serve the caviar in its original tin or jar, set in a small bowl of crushed ice. Never use a metal spoon to serve caviar — the metal oxidizes the eggs and ruins the delicate flavor. Use a mother-of-pearl spoon, bone spoon, or the back of a clean hand.

Arrange warm blinis on a silver tray or elegant platter. Accompany with small bowls of crème fraîche (mixed with chives), and the traditional accompaniments in separate small dishes.

The Etiquette: A proper blini service: take one warm blini, spoon a small amount of crème fraîche on top, add a modest amount of caviar (1 teaspoon is generous), and eat in a single bite or two — do not combine with all the accompaniments simultaneously, which overwhelms the caviar's flavor.

Caviar Sourcing Note: Look for sustainable farmed options from Petrossian, Marky's, or reputable importers. American farmed Ossetra and White Sturgeon caviars from California have received exceptional critical acclaim. Avoid very cheap "caviar" — the quality difference between genuine sturgeon roe and inferior substitutes is dramatic.

Pro Tips: Blinis served cold are infinitely less enjoyable — keep them warm until the last possible moment. The crème fraîche should be full-fat and slightly cool, providing a temperature contrast to the warm blini. Serve champagne alongside — it is the only beverage that truly complements caviar.
