Warm Brie & Cranberry Phyllo Cups

May 22, 2026
Pre-made phyllo shells — one of the great practical shortcuts in entertaining — are the reason these cups work at a party. Fill each with a cold cube of brie and a spoonful of cranberry compote, bake 6–8 minutes, add a candied pecan, serve warm. Total active time is under 10 minutes if the compote is made ahead (it keeps 2 weeks refrigerated).
The warm brie melting into the tart cranberry inside the shatteringly crisp phyllo shell is the contrast that makes guests reach for a second one immediately. The flavor logic with a citrus mimosa is equally clean: the cranberry mirrors the acidity, the brie cushions the palate, and the pastry crunch makes each sip feel more refreshing.
Ingredients (makes 30 cups): - 2 packages frozen mini phyllo shells (15 per package, available from Athens Foods and widely stocked at Trader Joe's and Whole Foods) - 7 oz ripe brie or Brie de Meaux, rind removed, cut into small ½-inch cubes - Flaky sea salt for finishing
Cranberry Compote: - 7 oz fresh or frozen cranberries - 5 tablespoons granulated sugar - 3 tablespoons fresh orange juice + zest of 1 orange - 1 tablespoon good-quality port or red wine (optional) - 1 cinnamon stick - 2 cloves - 1 tablespoon wildflower honey
Candied Pecans: - 2 ⅞ oz pecan halves - 2 tablespoons maple syrup - Pinch of flaky salt - Pinch of cayenne
Cranberry Compote: Combine cranberries, sugar, orange juice, orange zest, port, cinnamon stick, and cloves in a small saucepan. Bring to a simmer over medium heat, stirring. Cook for 10–12 minutes until the cranberries have burst, the mixture is jammy and thickened, and has reduced by about one-third. Remove cinnamon stick and cloves. Stir in honey. Cool to room temperature. (Can be made up to 2 weeks ahead; refrigerate in an airtight jar.)
Candied Pecans: Toss pecan halves with maple syrup, salt, and cayenne. Spread on a parchment-lined baking sheet. Bake at 350°F for 8–10 minutes until deeply golden and fragrant, stirring once. Cool completely. (Can be made 1 week ahead, stored airtight.)
Assembly: Preheat oven to 375°F. Arrange phyllo shells on a baking sheet. Place one cube of brie in the center of each shell. Spoon a small mound of cranberry compote on top of the brie. Bake for 6–8 minutes until the phyllo is hot and the brie is just beginning to melt.
Remove from oven. Immediately top each cup with one or two candied pecan pieces. Finish with a tiny pinch of flaky salt. Serve warm — within 5 minutes of baking.
The Mimosa Pairing Logic: The orange in the cranberry compote creates a direct bridge to classic orange and blood orange mimosas. The tart-sweet flavor of the compote mirrors the acidity in any citrus-forward sparkling drink, while the brie's richness cushions the palate between sips. For a particularly beautiful pairing, serve alongside a cranberry holiday mimosa or a pomegranate mimosa — the color echo alone is stunning.

Make-Ahead: Compote (2 weeks, refrigerated); candied pecans (1 week, airtight). Phyllo shells and brie can be assembled up to 4 hours ahead (unbaked, refrigerated). Bake just before service — the window for warm, perfectly melted brie is narrow and worth planning around.
Seasonal Note: This preparation is outstanding year-round using a quality jarred cranberry sauce when fresh cranberries are unavailable. In spring and summer, substitute strawberry-champagne compote (macerate sliced strawberries with sugar and a splash of Champagne) for a seasonal adaptation.
Pro Tips: Do not use phyllo pastry sheets for this preparation — the pre-made shells are far more practical and produce a superior, uniform result. The brie must be cold when placed in the shells; room-temperature brie will melt too quickly and run out of the shell before the phyllo is heated through.
