Blueberry Lavender Sparkling Lemonade Mocktail

Blueberry Lavender Sparkling Lemonade Mocktail

April 25, 2026

Blueberry and lavender is one of the great flavor pairings of modern pastry and cocktail culture — found in everything from Starbucks lavender lattes to fine dining tarte aux myrtilles to high-end craft cocktails worldwide. The combination works because the blueberry's deep, jammy tartness and the lavender's cool floral note share linalool — the same aromatic terpene compound — creating harmonic resonance rather than competing flavors.

As a sparkling lemonade mocktail, the combination becomes something truly exceptional: vivid indigo-purple, aromatically complex, with a fresh lemon acid backbone that balances both the berry sweetness and the lavender's potentially overwhelming floral note. It is the zero-proof drink that guests cannot stop talking about.

About the Ingredients

Fresh blueberries are strongly preferred — their anthocyanin content is highest immediately after picking, producing the deepest, most vivid color. Frozen blueberries (thawed) are a reliable year-round alternative. Avoid commercial blueberry juice, which is frequently a blend and lacks the color intensity needed for this recipe.

Culinary lavender must be food-grade (*Lavandula angustifolia* — English lavender). Never use ornamental, fragrance-grade, or unlabeled dried lavender — it may contain camphor compounds unsuitable for consumption. Frontier Co-op culinary lavender and Savory Spice Shop both carry reliable culinary-grade dried lavender.

Ingredients (serves 6): - 7 oz fresh blueberries - 2 tablespoons dried culinary lavender (food-grade) - ¾ cup water - ½ cup granulated sugar - 4 tablespoons fresh lemon juice (about 3 lemons) - 17 oz chilled sparkling water (San Pellegrino or Perrier) - Ice - Fresh blueberries, dried lavender sprig, and lemon wheel for garnish

For the Blueberry Lavender Lemonade Base: Make lavender simple syrup: combine water, sugar, and dried lavender in a small saucepan. Bring to a simmer, stir until sugar dissolves, remove from heat. Steep 15–20 minutes (no longer — excess steeping produces a soapy taste). Strain, discarding lavender flowers. Cool completely.

In a separate small saucepan, combine blueberries with 2 tablespoons of the lavender syrup. Cook over medium heat 5–6 minutes until berries burst. Mash gently. Strain through a fine-mesh sieve. Cool and combine with remaining lavender syrup and lemon juice. Taste — the lavender should whisper, not shout. The result is a deep indigo-purple concentrate. Chill. Keeps up to 5 days refrigerated.

Instructions: Chill champagne flutes for 5 minutes. Pour 2 oz of the blueberry lavender lemonade concentrate into each flute. Top slowly with chilled sparkling water. The deep indigo blooms through the clear water creating a beautiful color effect. Garnish with 3 fresh blueberries on a cocktail pick and a small dried lavender sprig resting on the rim.

Batch (serves 14): - 3½ cups blueberry lavender lemonade concentrate - 50 oz sparkling water, added at service

Variations: - Replace sparkling water with tonic water for a Blueberry Lavender Tonic with pleasant bitter complexity. - Add 1 tablespoon of elderflower cordial per serving for a Blueberry Lavender Elderflower Lemonade Spritz of doubled floral elegance. - Muddle 3–4 fresh blueberries in the glass before pouring for a more rustic, fruit-forward presentation with visible fruit texture.

Pairing: Blueberry Lavender Sparkling Lemonade pairs with sweet brunch dishes — French toast, lemon ricotta pancakes, fresh fruit tarts, and lavender panna cotta. The lemon's acidity also makes it work alongside savory preparations like smoked salmon and soft cheese boards.

Pro Tips: Strain the blueberry component thoroughly — the skins and seeds produce a murky result rather than the jewel-clear liquid that makes this drink so visually extraordinary. The lavender syrup is the variable that makes or breaks this recipe — always taste it before use and err on the side of using less.
