Gourmet Avocado Toast with Poached Egg

Gourmet Avocado Toast with Poached Egg

May 8, 2026

Avocado toast earned its reputation, and the jokes about it have gotten old. When the avocado is actually ripe, the bread is genuinely good sourdough, and the egg is properly poached — it's a legitimately excellent thing to eat. This version adds pomegranate seeds and microgreens not for aesthetics but because both add something real: the pomegranate brings tartness that cuts the richness, and the greens add a freshness the dish needs.

Start with the bread. Thick-cut sourdough, properly toasted until it's dark gold and has some structural integrity. That's the foundation everything else sits on.

Ingredients (serves 2): - 2 thick slices quality sourdough bread - 2 very ripe avocados - 2 fresh eggs, poached - Juice of ½ lemon - ½ teaspoon flaky sea salt - ¼ teaspoon red pepper flakes - 1 tablespoon pomegranate seeds - Handful of microgreens or pea shoots - Everything bagel seasoning - Extra virgin olive oil for drizzling

Instructions: Toast sourdough in a toaster or under the broiler until deeply golden. Halve avocados and scoop flesh into a bowl. Mash with lemon juice, sea salt, and red pepper flakes — keep it chunky, not smooth. Spread generously on the toast. Top with the poached egg. Scatter pomegranate seeds and microgreens. Sprinkle everything bagel seasoning. Finish with a drizzle of excellent olive oil and an extra pinch of flaky salt.

Variations: Smash a clove of roasted garlic into the avocado before spreading. Add thin slices of watermelon radish for color and crunch. Replace the poached egg with whipped feta for a vegetarian version of equal excellence.

Pro Tips: Avocados must be truly ripe — squeeze gently, they should yield but not feel mushy. Season more aggressively than you think necessary; avocado absorbs salt readily.
