Wagyu Beef Sliders with Truffle Aioli

Wagyu Beef Sliders with Truffle Aioli

May 18, 2026

Wagyu Beef Sliders are the ultimate luxury event finger food — tiny but deeply satisfying, made from the most marbled, buttery beef available, and finished with a truffle aioli that makes each bite feel genuinely indulgent. These are the sliders that change people's minds about what a slider can be.

Wagyu beef's extraordinary fat content means these sliders need little seasoning and virtually no time to cook — they are best served medium-rare, where the extraordinary marbling has time to render into the meat without overcooking.

Ingredients (makes 20 sliders): - 1¼ lbs ground wagyu beef (or blend with regular ground beef 50/50) - Salt and freshly cracked black pepper only - 20 small brioche slider buns - 20 slices aged white cheddar - Butter for toasting buns

Truffle Aioli: - ½ cup good mayonnaise - 1 teaspoon truffle oil - 1 teaspoon white truffle paste (optional but extraordinary) - 1 small garlic clove, grated - 1 teaspoon lemon juice - Salt to taste

Toppings: - Arugula leaves - Sliced cornichons - Caramelized onions (made ahead)

Instructions: Form wagyu into small patties (about 1 oz each). Season generously with salt and pepper only — wagyu needs nothing more. Cook in a screaming-hot cast iron pan or griddle, 1–1.5 minutes per side for medium-rare. Add cheddar for the last 30 seconds.

Toast slider buns in butter until golden. Spread truffle aioli on both halves. Layer arugula, patty, cornichon, and a small spoonful of caramelized onion.

Pro Tips: Do not press the patties during cooking — you'll squeeze out the precious wagyu fat. Cook in small batches to maintain high pan temperature.
