The Sparkling Zombie

June 18, 2026

The Zombie was invented in late 1934 by Donn Beach, born Ernest Raymond Beaumont-Gantt, at his Hollywood restaurant Don the Beachcomber, the establishment that effectively launched American tiki culture. Beach created the drink, according to the most widely told origin story, to cure the hangover of a customer who had returned from a trip to Havana, and the customer reportedly pronounced that it turned him into a zombie for the rest of the day. The Zombie became one of the most famous tiki cocktails of the twentieth century, and Don the Beachcomber enforced a strict two-per-customer limit, since the original recipe called for three different rums at a combined proof that could stagger the most seasoned drinker (Wikipedia)).

The Zombie is a multi-rum cocktail built on falernum, grenadine, citrus, and Pernod or absinthe, layered and complex in a way that no single-rum drink can match. The blend of light, golden, and dark rums gives the drink a progressive depth, the falernum adds clove and lime, and the Pernod contributes an anise note that sits behind the fruit. Topped with sparkling wine, the Zombie becomes a brunch cocktail of surprising elegance. The bubbles lift the tropical fruit and the falernum, the drink takes on the lightness of a punch crossed with a Mai Tai, and the result is a celebratory brunch centerpiece for a long table.

Ingredients (serves 6): - 3 oz light Puerto Rican rum - 3 oz gold Jamaican rum (such as Appleton Estate) - 3 oz dark Demerara rum (such as El Dorado 12) - 3 oz fresh lime juice - 3 oz fresh grapefruit juice - 1½ oz falernum (such as John D. Taylor's) - 1 oz grenadine (preferably homemade) - ½ oz 151-proof rum, for float - 6 dashes Angostura bitters - 6 dashes Pernod or Herbsaint - 1 bottle (3 ⅛ cups) chilled Cava Brut or dry Prosecco - Mint sprigs, tropical flowers, and fruit slices for garnish

Instructions: Combine the three rums (excluding the 151), lime juice, grapefruit juice, falernum, grenadine, bitters, and Pernod in a cocktail shaker with ice. Shake vigorously for 20 seconds. Strain into tall tiki mugs or Collins glasses filled with crushed ice. Float ½ oz of 151-proof rum on top of each drink. Top slowly with 1 oz chilled Cava per glass, pouring gently down the side. Garnish with mint sprigs, a tropical flower, and slices of pineapple and lime.

For a Crowd (serves 12): - Double all rum, juice, falernum, and grenadine; 2 bottles chilled Cava Brut - Pre-batch the base in a pitcher; shake in batches and top with Cava and 151 float at service.

Variations: - Original 1934 Zombie: Use the historical blend of light rum, gold rum, dark Demerara rum, and 151-proof rum, with falernum, grenadine, Pernod, and a dash of Angostura. - Sparkling Zombie Punch: Build the entire batch in a punch bowl over a large ice block, float the 151 and Cava across the top, and serve with a ladle. - Tropical Zombie Royale: Increase the sparkling-wine top to 2 oz per glass for a lighter, brunch-friendly drink.

Pairing: The Zombie's tropical fruit and rum character pairs well with brunch dishes such as Hawaiian loco moco, pineapple-coconut chia pudding, or a tropical fruit tart. Its richness also makes it a counterpoint to a pineapple-coconut mimosa, and it sits comfortably in the same brunch flight as the tropical mango mimosa.

Pro Tips: The Zombie is built on the interplay of three rums, and each one contributes something the others cannot. Light Puerto Rican rum carries the proof, gold Jamaican rum carries the funky ester notes, and dark Demerara rum carries the molasses and caramel weight. Skipping any one of the three produces a drink that reads as flat. Falernum, the clove-lime-almond syrup from Barbados, is non-negotiable, since it carries the spice that holds the fruit together. Shake hard, pour over crushed ice, and add the 151 and Cava last, since both should float rather than churn.
