Smoked Duck Breast & Cherry Compote Crostini

May 28, 2026
Duck and cherry is one of the defining flavor pairings of classical French cuisine — the rich, gamey dark meat against the sweet-tart brightness of cherries is a combination that has appeared on restaurant menus from Escoffier's Paris to contemporary Michelin-starred kitchens. On a crostini, with crumbled blue cheese adding salinity and funk, the bite delivers a genuinely complex flavor experience in a single mouthful.
Smoked duck breast — available at quality delis and specialty food stores — eliminates the lengthy cook time while adding a dimension of smoke that fresh duck doesn't provide. The cherry compote, made in 10 minutes, can be refrigerated for two weeks. Both together on crostini take ten minutes of morning assembly.
Ingredients (makes 30 crostini): - 2 smoked duck breasts (magret fumé — available from D'Artagnan, specialty delis, or French import shops), sliced paper-thin - 1 sourdough baguette, sliced thin on the diagonal (30 slices) - 2 tablespoons olive oil for brushing - 2 ⅞ oz Gorgonzola Dolce or Roquefort, crumbled (at room temperature) - Fresh thyme leaves and microgreens for garnish
Sour Cherry Compote: - 10.6 oz fresh or frozen sour (tart) cherries, pitted (or high-quality jarred Morello cherries, drained) - 3 tablespoons granulated sugar - 2 tablespoons good-quality port or red wine (Pinot Noir is ideal) - 1 tablespoon red wine vinegar - 1 cinnamon stick - 2 cloves - 1 strip orange peel - Pinch of salt
Sour Cherry Compote: Combine all compote ingredients in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Cook for 12–15 minutes until the cherries have softened, released their juice, and the sauce is jammy and slightly thickened. Remove cinnamon stick, cloves, and orange peel. Taste — it should be sweet, tart, and deeply fruity with a wine-like depth. Cool completely. (Can be made 2 weeks ahead; refrigerate in an airtight jar.)
Crostini: Brush baguette slices with olive oil. Bake at 400°F for 8–10 minutes until deeply golden and crisp. Cool on a rack. (Can be made 3 days ahead; store airtight.)
Assembly: Spoon a small mound of sour cherry compote onto each crostino. Fold a thin slice of smoked duck breast and place alongside the compote. Crumble a pinch of Gorgonzola Dolce over both. Tuck 2–3 fresh thyme leaves between the duck and compote. Place a small micro herb tuft at the edge. Finish with flaky salt and cracked pepper.

Make-Ahead: Compote (2 weeks, refrigerated); crostini (3 days, airtight). Assemble up to 45 minutes before service — the smoked duck holds well at room temperature.
Variations: Replace blue cheese with a thin spread of duck liver mousse or foie gras mousse for a more luxurious version. Add a thin slice of candied orange peel alongside the duck for an additional citrus dimension. Replace sour cherry compote with black cherry jam enriched with a tablespoon of cognac for a quicker preparation.
Pro Tips: Paper-thin slices of smoked duck breast are essential for a crostini of elegant proportions — thick slices overwhelm the bread and the compote. A quality deli slicer or very sharp slicing knife are the tools for this. D'Artagnan's magret fumé is the most widely available and reliably excellent option for this preparation in North American markets.
