Pineapple Overnight Oats Tropical Bowl

Pineapple Overnight Oats Tropical Bowl

June 1, 2026

Overnight oats, the practice of soaking rolled oats in liquid overnight rather than cooking them, produces a texture and flavor wholly unlike hot porridge. The long cold soak lets the oats absorb the liquid slowly, hydrating fully without losing their nuttiness, and gives a softer, slightly chewy consistency that many people prefer to the cooked bowl. The method is also more digestible: the phytic acid in oats, which can interfere with mineral absorption, is partly broken down over the long soak (The Kitchn).

This tropical version works fresh pineapple juice into the oat base, so the oats taste of the tropics from the first bite, and tops it with fresh pineapple, toasted coconut, a macadamia crumble, and passion fruit pulp. The pineapple juice does real work in the soak: its natural sugars sweeten without added sugar, its malic acid brightens the flavor, and its bromelain enzyme softens the oat slightly. The bowl is assembled the night before and needs only a few minutes of topping in the morning, which makes early hosting easy. Use the juice drained from a fresh pineapple or a pure pineapple juice with no added sugar.

Ingredients (serves 6, in individual wide-mouth mason jars):

Overnight Oats Base: - 3 cups old-fashioned rolled oats (not quick-cooking) - 1½ cups full-fat coconut milk - ½ cup fresh pineapple juice (or 100% pure pineapple juice) - ½ cup whole milk or oat milk - ½ cup plain full-fat Greek yogurt - 2 tablespoons chia seeds - 2 tablespoons pure maple syrup or honey - 1 teaspoon pure vanilla extract - ½ teaspoon ground cinnamon - Zest of 1 lime - Pinch of fine sea salt

Fresh Pineapple Topping: - 2 cups fresh pineapple, diced into ½-inch cubes - 1 tablespoon honey - 1 teaspoon fresh lime juice - Pinch of Tajín or chili-lime seasoning (optional — creates a beautiful complexity)

Macadamia Coconut Crumble: - ⅓ cup raw macadamia nuts, roughly chopped - ⅓ cup large-flake unsweetened coconut - 1½ tablespoons coconut sugar - 1 tablespoon coconut oil, melted - Pinch of sea salt

Additional Toppings: - 3 tablespoons passion fruit pulp (fresh or from jar) - 1 ripe banana, sliced - Additional toasted coconut flakes - Fresh mint sprigs - Lime wedges - Drizzle of honey

Evening Before: Combine rolled oats, coconut milk, pineapple juice, milk, Greek yogurt, chia seeds, maple syrup, vanilla, cinnamon, lime zest, and salt in a large bowl. Stir vigorously until uniform. Taste — it should be mildly sweet, coconut-forward, and noticeably tropical. Divide evenly among 6 mason jars (wide-mouth pint jars are ideal). Seal and refrigerate overnight (8–12 hours).

Make the macadamia coconut crumble: toss nuts, coconut, coconut sugar, coconut oil, and salt. Spread on a parchment-lined baking sheet. Bake at 325°F for 12–14 minutes until golden. Cool completely. Store in an airtight container.

Morning Of: Remove jars from the refrigerator. The oats will have thickened considerably. Stir each jar, adding a splash of milk if the oats seem too thick for preference.

Toss diced pineapple with honey, lime juice, and Tajín (if using).

Assembly: Top each jar with a generous spoonful of macerated pineapple. Add a few banana slices. Spoon passion fruit pulp over the pineapple. Scatter macadamia coconut crumble generously. Finish with additional coconut flakes, a sprig of fresh mint, a drizzle of honey, and a wedge of lime on the side. Serve immediately with the crumble on top.

The Pairing: Pineapple Overnight Oats Tropical Bowl pairs beautifully with a Pineapple Coconut Mimosa or a Passion Fruit Prosecco Mimosa — the tropical complexity in the oats creates a gorgeous flavor echo with both.

Variations: - Mango Pineapple Version: Add ½ cup mango purée to the oat base and top with both fresh mango and pineapple - Tropical Green Bowl: Add 2 tablespoons matcha powder to the base for a beautiful green-and-gold color contrast - High-Protein Version: Add 1 scoop vanilla protein powder and increase Greek yogurt to 1 cup for a more substantial brunch option

Pro Tips: The overnight rest is where this recipe's magic happens — do not reduce it below 6 hours. For the crumble, watch the oven carefully in the last 2 minutes of baking: coconut flakes can go from golden to burnt in under a minute. Always add the crumble immediately before service — it softens within 15 minutes in contact with the moist oat base.
