Pear, Gorgonzola & Walnut Endive Cups

May 24, 2026
No cooking, no crostini base to bake, no molds to fill. The endive leaf is the vessel — its natural boat shape, slight bitterness, and crisp texture make it the most practical no-cook party bite available. Fill it with sliced Bosc pear, crumbled Gorgonzola Dolce at room temperature, candied walnuts, a drizzle of honey, and microgreens. Assembly takes minutes.
The flavor sequence is genuinely elegant: sweet pear, salty-funky Gorgonzola, bitter endive, caramel walnut, honey brightness. Each element earns its place. The Gorgonzola must be room temperature to crumble cleanly; cold Gorgonzola is too hard and doesn't yield right.
Ingredients (makes 30 endive cups): - 5–6 heads Belgian endive (yields approximately 30 individual leaves) - 2 ripe but firm Bosc or Anjou pears - 6 ⅓ oz Gorgonzola Dolce (the younger, creamier variety — not aged Gorgonzola Piccante) - 2 ⅞ oz candied walnuts (or toasted walnuts tossed in maple syrup and cooled) - 3 tablespoons wildflower honey - 3 ½ oz microgreens (arugula, pea shoots, or mixed microgreens) - 1 tablespoon fresh lemon juice (for the pear) - Flaky sea salt and cracked black pepper
Honey Vinaigrette (optional, for drizzling): - 2 tablespoons extra virgin olive oil - 1 tablespoon white wine vinegar or Champagne vinegar - 1 teaspoon honey - ½ teaspoon Dijon mustard - Salt and pepper
Preparation: Separate endive leaves carefully from the base, starting from the outside and working inward. Select the 30 most cup-shaped leaves (medium-sized — the innermost tiny leaves are too small; the outermost large leaves may be too flat). Rinse briefly and pat completely dry. Refrigerate, covered with a damp towel, until assembly.
Cut pears into thin slices or small cubes. Immediately toss with lemon juice to prevent browning.
Whisk honey vinaigrette if using.
Assembly (30 minutes before service at most): Arrange endive cups on a chilled serving platter. Place 2–3 pear slices in each cup. Crumble a generous pinch of Gorgonzola Dolce over the pear. Add 2–3 walnut pieces. Place a small tuft of microgreens at the tip of the leaf. Drizzle a few drops of honey over each cup. If using vinaigrette, drizzle very lightly. Finish with a pinch of flaky salt and cracked pepper.
The Mimosa Pairing Logic: The pear's delicate floral sweetness mirrors the honeyed notes in a peach bellini mimosa or elderflower St-Germain mimosa. The Gorgonzola's salt and funk make any citrus mimosa taste brighter and more refreshing. The endive's bitterness cleanses the palate between sips, creating a delicious feedback loop of bite, sip, and refreshment.

Make-Ahead: Endive cups can be separated and refrigerated 8 hours ahead. Pear can be sliced and tossed with lemon juice 1 hour ahead. Candied walnuts keep for 1 week airtight. Assemble no more than 30 minutes before service — the endive retains its crunch well, but the pear will begin to oxidize despite the lemon juice.
Variations: Replace pear with fresh figs in season — the combination of fig, gorgonzola, and walnut is even more celebrated. Substitute Roquefort or Stilton for a more assertive blue cheese experience. Add a paper-thin slice of prosciutto draped over the filling for a more substantial bite.
Pro Tips: Gorgonzola Dolce (DOP-certified, from Lombardy and Piedmont) must be at room temperature to crumble properly — cold Gorgonzola is too hard and does not yield cleanly. Its creaminess when warm is essential to the textural pleasure of this bite. Always buy from a cheese shop that keeps it properly refrigerated and sells it in good condition.
