Lox & Herb Cream Cheese Bites

May 27, 2026
These are consistently the first bites to disappear from any platter, without exception. The combination of cold-smoked salmon and herbed cream cheese on cucumber is one of those pairings that has endured because it genuinely works — the salt and smoke against the bright cream, the cool cucumber crunch. As a mimosa pairing it's excellent: the smokiness makes the citrus taste sharper and more vivid, and the cream cheese cushions the palate perfectly between sips.
Plan generously. More than you think you need.
Ingredients (makes 36 pieces): - 3 large English cucumbers, sliced into ½-inch rounds (about 36 rounds) — OR use mini bagel chips or endive leaves for variety - 8 ⅞ oz good-quality cold-smoked lox or Nova Scotia smoked salmon, thinly sliced
Herb Whipped Cream Cheese: - 10.6 oz full-fat cream cheese, at room temperature - 3 tablespoons heavy cream (for whipping) - 3 tablespoons fresh dill, very finely minced - 2 tablespoons fresh chives, very finely snipped - 1 tablespoon fresh flat-leaf parsley, minced - Zest of 1 lemon - 1 tablespoon fresh lemon juice - 1 teaspoon finely grated fresh horseradish (or ½ teaspoon prepared) - Salt and white pepper
Garnishes: - 36 small capers or caper berries - Additional dill fronds - Thin lemon slices, halved - Flaky sea salt - Cracked black pepper - Optional: 1 oz salmon roe for a luxurious touch
Herb Cream Cheese Instructions: Beat cream cheese and heavy cream with an electric mixer or in a food processor for 2 minutes until very light and fluffy — this aeration makes it pipe beautifully and taste lighter. Fold in dill, chives, parsley, lemon zest, lemon juice, and horseradish. Season with salt and white pepper. Taste carefully — it should be bright, herby, and slightly tangy. Transfer to a piping bag fitted with a star tip. Refrigerate up to 48 hours.
Assembly: Pat cucumber rounds completely dry with paper towels — any moisture will prevent the cream cheese from adhering properly. Pipe a generous rosette of herb cream cheese onto each round. Fold or curl a small piece of smoked salmon and place it on top of the cream cheese. Add a caper and a small dill frond. Finish with a pinch of flaky salt and a crack of black pepper.
If using roe, place a small amount alongside the salmon on the cream cheese rosette.
Arrange on a chilled platter. Serve immediately or refrigerate for up to 1 hour.
The Mimosa Pairing: These bites pair perfectly with classic orange mimosas, blood orange mimosas, grapefruit mimosas, and any citrus-forward sparkling cocktail. The salmon's smokiness creates a beautiful contrast with citrus acidity, and the cream cheese's richness makes the champagne bubbles feel especially cleansing on the palate.
Pro Tips: The piping bag is non-negotiable for a clean, elegant presentation — spooning the cream cheese produces a rough, casual look that doesn't do justice to the occasion. Nova-style lox (cold-smoked, not hot-smoked) is the correct choice for this preparation — the silky, uncured texture is essential.
