French Macaron Tower Display

French Macaron Tower Display

May 12, 2026

A French Macaron Tower is the most theatrical of all event dessert presentations — a dramatic pyramid of pastel-colored almond meringue sandwiches that serves simultaneously as showpiece centerpiece and delicious dessert. It requires patience and technique, but the result is genuinely spectacular.

French macarons are one of the most technically demanding confections in pastry — the shells require precise Italian or French meringue technique, accurate baking, and a proper "macaronage" (the folding step). But once mastered, they are endlessly versatile and customizable.

Ingredients (makes approximately 36 macarons for a medium tower):

Shells: - 2 cups almond flour, sifted - 2 cups powdered sugar, sifted - 2½ oz aged egg whites (room temperature) - 1 cup sugar + 5 tablespoons water (for Italian meringue method) - 2½ oz fresh egg whites - Gel food coloring in 3–4 pastel shades

Vanilla Buttercream Filling: - 14 tablespoons unsalted butter, softened - 2½ cups powdered sugar - 2 tablespoons heavy cream - 1 teaspoon vanilla bean paste

Shell Instructions: Mix almond flour and powdered sugar (tant pour tant). Make Italian meringue with the sugar, water, and fresh whites. Fold both aged whites and meringue into the almond mixture (macaronage) until batter flows like lava and a ribbon dissolves in 10 seconds. Pipe onto parchment-lined sheets. Rest 30–45 minutes until skins form. Bake at 300°F for 14 minutes. Cool completely.

Assembly: Sandwich with buttercream. Stack on a macaron tower stand or use a Styrofoam cone as structural support, attaching macarons in rows with toothpicks.

Pro Tips: Aged egg whites (left uncovered in the fridge for 24–48 hours) produce more stable meringue. Humidity is the macaron's enemy — do not bake on rainy days.
