Burrata Caprese Bruschetta

Burrata Caprese Bruschetta

May 1, 2026

There's a specific moment at brunch or a party when a plate lands on the table and someone goes "oh" before they've even tasted it. Burrata caprese bruschetta tends to be that moment — heirloom tomatoes in yellow and red and green piled on toasted sourdough, fresh burrata torn open over the top, balsamic pooling in the creases. It looks composed and abundant at the same time.

The whole thing succeeds or fails based on ingredient quality. Peak-season heirloom tomatoes, burrata that's genuinely fresh (not three days old), and actual aged balsamic glaze — not the thin vinegar variety. That's really all the advice needed.

Ingredients (makes 16 pieces): - 1 sourdough baguette, sliced ½ inch thick - 2 balls fresh burrata (9 oz total) - 4 cups mixed heirloom tomatoes, various sizes and colors - 20 large fresh basil leaves - 3 tablespoons aged balsamic glaze (or reduce balsamic vinegar by half) - 4 tablespoons excellent extra virgin olive oil - 2 garlic cloves, halved - Flaky sea salt and cracked black pepper

Instructions: Brush baguette slices generously with olive oil. Toast in oven at 400°F for 8–10 minutes until deeply golden and crisp. Rub immediately with the cut side of a garlic clove — this fades quickly, so the rubbing moment is important.

Halve or quarter tomatoes depending on size. Season with salt, pepper, and a tablespoon of olive oil. Let sit for 5 minutes.

Tear or spoon burrata onto each toast — it should be lavishly applied. Top with seasoned tomatoes. Drape basil leaves. Drizzle balsamic glaze and remaining olive oil. Add a final pinch of flaky salt. Serve immediately.

Pro Tips: Burrata is best at room temperature — remove from the refrigerator 20 minutes before serving. The balsamic glaze can be made ahead: simply simmer regular balsamic vinegar until reduced by half and syrupy.
