Bruschetta Three Ways
May 22, 2026
A bruschetta trio is the ideal party appetizer for a crowd — beautiful, endlessly varied, and completely manageable to make in large quantities. By offering three distinct toppings on the same toasted base, you create a visual spread that impresses and satisfies every flavor preference.
The non-negotiable is the bread: thick-cut sourdough or ciabatta, brushed with good olive oil, and toasted until genuinely crisp and golden, not merely warm.
The Base: - 1 large sourdough loaf or ciabatta, sliced ½ inch thick - Excellent extra virgin olive oil - 2 garlic cloves, halved - Flaky sea salt
Variation 1 — Classic Tomato & Basil: - 4 ripe Roma tomatoes, diced small - 15 fresh basil leaves, torn - 1 tablespoon balsamic glaze - Olive oil, salt, pepper
Variation 2 — White Bean & Roasted Garlic: - 1 can white cannellini beans, drained - 1 head roasted garlic, squeezed from skins - 2 tablespoons lemon juice - Fresh rosemary, olive oil, salt
Variation 3 — Ricotta, Honey & Walnut: - 8 ⅞ oz fresh whole-milk ricotta - 3 tablespoons honey - ½ cup candied walnuts - Fresh thyme, lemon zest
Instructions: Toast bread until deeply golden. Rub immediately with garlic. Season with salt and olive oil. Top each bruschetta according to its variation. Arrange in labeled rows on a large board.
Pro Tips: Toast the bread no more than 30 minutes before service — it goes soft quickly once topped. Dice the tomatoes no more than 2 hours ahead and keep unseasoned until ready to top.
