The Blueberry Lavender Mimosa

The Blueberry Lavender Mimosa

March 25, 2026

The Blueberry Lavender Mimosa is the brunch cocktail that stops guests mid-conversation — a deep ruby-purple sparkling drink with a floral, berry-forward aroma, garnished with fresh blueberries and a sprig of culinary lavender. It is as visually striking as it is delicious.

Fresh blueberries are muddled or puréed to release their deep, jammy juice, which blends with lavender simple syrup and Prosecco to create a drink that is simultaneously fruity, floral, and effervescent. The color is extraordinary — a vibrant indigo-purple that deepens as the blueberry juice meets the bubbles.

Ingredients (serves 2): - 4 oz well-chilled Prosecco Brut or Cava - 2 oz fresh blueberry juice or blueberry purée (see below) - ½ oz lavender simple syrup (see below) - Fresh blueberries and a sprig of culinary lavender for garnish

Blueberry Juice/Purée: - 1 cup fresh blueberries - 1 tablespoon sugar - 1 tablespoon fresh lemon juice

Combine blueberries, sugar, and lemon juice in a small saucepan over medium heat. Cook 5–7 minutes, stirring, until berries burst and release their juice. Mash gently. Strain through a fine-mesh sieve, pressing firmly, for a clear juice — or leave unstrained for a slightly thicker purée. Cool completely. Keeps refrigerated for up to 5 days.

Lavender Simple Syrup: - ⅔ cup water - ¾ cup sugar - 2 tablespoons dried culinary lavender (food-grade)

Bring water and sugar to a boil, stir until dissolved. Remove from heat, add lavender, steep 15–20 minutes. Strain and cool. Keeps refrigerated for 2 weeks. Use food-grade (culinary) lavender only.

Instructions: Chill champagne flutes in the freezer for 5 minutes. Combine blueberry juice and lavender simple syrup in a small pitcher. Pour 3 tablespoons of the blueberry-lavender blend into each chilled flute. Top gently with chilled Prosecco — pour down the side of the glass to preserve the bubbles. Do not stir — the natural layering is beautiful. Thread 3–4 fresh blueberries onto a cocktail pick and rest it across the rim. Add a sprig of fresh lavender.

For a Mimosa Bar (serves 12): - 2½ cups blueberry juice/purée - ⅔ cup lavender simple syrup - 2 bottles Prosecco Brut (chilled)

Combine blueberry juice and lavender syrup in a labeled glass pitcher. Set alongside ice-cold Prosecco bottles. Instruct guests: 3 tablespoons blend per flute, top with Prosecco.

Flavor Notes: The lavender should be a whisper — present on the nose and in the back-palate finish, not a dominant flavor. If the lavender is too prominent, reduce the syrup to 1 tablespoon per serving. The blueberry's natural tartness and the Prosecco's dry bubbles keep the drink from becoming sweet.

Variations: - Blueberry Lavender Royale: Use Champagne instead of Prosecco for a more elegant, drier version. - Non-Alcoholic Version: Replace Prosecco with elderflower sparkling water or tonic water. - Honey Lavender: Replace the lavender simple syrup with 1 tablespoon raw honey dissolved in a teaspoon of warm water, plus a drop of culinary lavender extract.

Pro Tips: Strain the blueberry juice completely — unstrained purée produces a drink that looks murky rather than jewel-bright. Fresh blueberries produce a more vivid color and flavor than frozen. The lavender syrup can be made up to 2 weeks ahead. Never substitute decorative lavender for culinary — only food-grade lavender should be consumed.
