Hand-Passed Blinis with Crème Fraîche & Smoked Salmon

May 25, 2026
The hand-passed blini is the arrival bite that sets the tone before anyone has said a word. Warm buckwheat pancake, cool crème fraîche, silky smoked salmon — the temperature contrast alone makes an impression. Guests remember these specifically, which is remarkable for something this simple.
The buckwheat gives the blinis a slightly nutty, earthy quality that plain flour never achieves. Make the batter 30 minutes ahead and let it rest. Keep the cooked blinis warm in a low oven and top just before passing.
Ingredients (makes 24 blinis): - 1¼ cups buckwheat flour - 6 tablespoons all-purpose flour - 1 teaspoon instant yeast - 1 teaspoon sugar - 1 cup warm whole milk - 1 large egg, separated - ½ teaspoon salt - 2 tablespoons unsalted butter for cooking
Toppings: - ⅔ cup crème fraîche - 5 oz premium smoked salmon, torn into small pieces - 1 oz salmon roe (optional but spectacular) - Fresh dill sprigs - Lemon zest - Cracked black pepper
Instructions: Combine both flours, yeast, sugar, and salt. Whisk in warm milk and egg yolk until smooth. Cover and rest 30 minutes until slightly puffed. Beat egg white to stiff peaks and fold into the batter.
Cook tablespoon-sized rounds in a lightly buttered pan over medium heat, about 1–2 minutes per side until golden. Keep warm in a low oven.
Top each blini with a small spoon of crème fraîche, a curl of smoked salmon, a tiny amount of roe if using, a sprig of dill, and a pinch of lemon zest and pepper. Pass immediately.
Pro Tips: Blinis are best served warm — the contrast of warm pancake with cool crème fraîche is part of the appeal. They can be cooked up to 30 minutes ahead and kept warm on a baking sheet in a 200°F oven. Top just before passing.
